Mutton Curry

Mutton Curry

Ingredients:

Mutton – ½ kg

Green cardamoms – 3

Cloves – 6

Cinnamon - small stick

Onion (big) – 1

finely choppedGreen chillies – 3 slit into half

Coriander leaves – for garnishing

Oil - 4 tbsp

Marinate ingredients:

Curd – 1 cup

Ginger garlic paste – 1tsp

Chilli powder – 1 tsp

Coriander powder – 1 tsp

Turmeric powder – ½ tsp

Garam masala – ½ tsp

Cumin powder – ½ tsp

Salt – to taste.

Method:

*Clean and wash the mutton pieces.

*Marinate the mutton pieces with marinate ingredients for 1 hour.

*Take a pan and heat with 4 tbsp of oil.

*Add the green cardamoms, cloves and cinnamon.Sauté for few secs.

*Then add the chopped onions and green chillies.

*Sauté till the onion colour turn into golden brown colour.

*Then add the marinated mutton pieces and mix well.

*Cook until the oil separates on medium flame.

*Add 2 cups of water and cover with a lid and cook till the mutton is tender.

*Finally garnish with coriander leaves.Serve hot with rice, paratha, roti etc…

Fish Curry

Ingredients:

1 Kg fish

3 medium Onions

2 medium tomato

2-3 tsp ginger garlic paste

2 lemon sized tamarind

Salt To Taste

1tsp cumin seeds

1 tsp mustard seeds

1tsp turmeric powder

1-2 tsp red chilli powder

2-3 green chilli

1/2tsp garam masala powder(cloves+cardmom)
1tsp corriander powder

Method:
Marination :

Clean the fish and cut it to your desired size pieces.
Add salt,1 tsp red chilli powder,1 tsp ginger garlic paste,1/2 tsp turmeric,1/4 tsp garam masala to the fish pieces and apply the mixture to the fish pieces with hand.Keep it aside for an hour.

Curry fish Preparation:

*Cut the onion,tomato,green chilli into slices.

*Take a wide pan otherwise the fish pieces get mashed while you are stirring.

*Heat the frying pan,add some oil,turmeric powder,mustard seeds,cumin seeds to the pan. Let the mustard seeds get splutter.

*Now add chopped onion and green chilli,curry leaves.

*Let the onions gets slightly brown in color.

*Add 1-2 tsp ginger garlic paste to the onions and stir for half a minute.

*Add chopped tomato and let it cook softly.

*Add corrainder powder,garam masala powder and stir for a minute.

*Now add tamarind juice(Soak tamarind in warm water so that you can get the juice easily),add salt and let the sauce gets boiled.

*Add the marinated fish pieces and simmer the stove.

*Let the fish pieces cooked in the sauce for 15-20 minutes.

*Stir the pieces very carefully,It's better not to stir too often.

*Make sure that the fish piece is almost sinked in the sauce so that it gets cooked nicely.

*Adjust the salt and chilli powder according to your interest and turn off the heat.

*Garnish with fresh corriander leaves.

Fish Fry

Ingredients:

8-9 medium sized fish fillet, washed

1 1/2 tbsp ginger-garlic paste

juice of one lemon

pinch cumin pwd

large pinch coriander powder

pinch turmeric pwd

1 1/2 tsps red chilli pwd

salt to taste

1 1/4 tbsps oil

few curry leaves

Method:

*Combine ginger garlic paste, lemon juice, salt, red chilli pwd, turmeric pwd, cumin pwd and coriander pwd in a flat dish.

*Apply this marinade lightly to the fish pieces and keep aside for 20-30 mts.

*Heat oil in a non-stick pan, add few curry leaves, place the marinated fish and fry for 14-15 mts on low to medium flame.

*Once its nicely browned, flip over gently to the other side and roast fish for another 10-12 mts till browned.
Serve hot with onion rings and lemon wedges.

Chicken breast fillet


Ingredients:

Chicken breast fillet - 5

 Salt to taste

Black pepper - 1 tsp

White pepper- 1/2 tsp

Red chillie powder- 1 tsp

Egg - 2

corn flour -4 tbsp

Chicken Tikka masala - 1tbsp

FOR COATING:

Mida flour - 1/4 cup

Corn flour - 1/2 cup

Baking powder 1 Tbsp

Salt to taste

Black pepper to taste

oil for frying

Method:

*Put chicken fillets on slap ham with hammer lightly on both sides and if you are using leg pieces put small cuts on both sides with the help of knife now put in bowl add salt,black pepper,white pepper,tikka masalah,red chillies,hand beated eggs,mix well and leave for 15 min

*Take a bowl mix 1/4 cup flour and 1/2 cup corn flour with baking powder,black pepper and salt mix well.

*Now come very tricky part its really easy but you have to concentrate on this very care fully Dip Step 1 into Step 2 and rub well with hands not tightly but well lightly

*Take another bowl filled with water and dip rubbed chicken piece in water while holding chicken piece from very end and count to 10 then

*Shake the piece in air for 3 secnd so remove excess water

*Put again the pieces in 2 and rub again and again shake the piece in air to remove excess flour by doing that u will already see crubs forming on chicken pieces

*Now deep fry for exactly 7-10 min  (my advice fry one piece at time.)

*Ready to serve

Chicken Tikka

Chicken Tikka

Ingredients :

boneless chicken cubes - 1lbs

coriander pdr (optional) - 1tbsp

Chiken Tikka  masala -1/2tbsp

ginger garlic paste - 1tbsp

chilli pdr - 1tsp

lemon juice - 2tbsp

onion, ,tomato ,bellpepper small - 1

saltto taste

curd - 2tbsp

Method:

*Cut chicken in to small cubes, wash nicely and apply lemon juice and spices.

*Mix well and then keep the chicken pieces in this marinade for about 2 hours in the refrigerator.

*Put the chicken and other vegetables on to skewers and cook in moderately hot tandoor for about 6 to 8 minutes,

*keep basting the chicken pieces with butter and cook until slightly colored and cooked.

*Remove and serve hot sprinkled with chaat masala.
