Veg Biryani-వెజ్ బిర్యాని


Ingredients:
Basmati Rice-2cups
Onion-1(chopped length wise)
Green Chillies-5
Potato -1 (chopped as cubes)
Carrot-1(chopped round shapes)
Tomato-1
G&G paste-1tbsp
Curd-4tbsp
Turmeric-a pinch
Cloves-2
Green Cardmom-1
Cinnamon-1′
Bay leaves-2
Star anise-1
Shajeera-1/4tsp
Cashews-10
Coriander leaves-1/4 cup
Mint leaves-1/4 cup
Salt to taste
Oil -2tbsp
Water-3cups
Process:
First wash & soak the rice in water for 20mins.
Heat oil in a pan, when it is hot add cloves, cinnamnon stick ,shajeera,cashews,bay leaves,star anise,cardamom saute until the aroma of whole spices rise.
Add chopped onions,green chillies to the pan and fry until onions turns brown, add g&g paste to the onions and fry until raw smell goes off.
Next add potato cubes & carrot pieces fry until these are half cooked.
Now add tomato pieces, mint leaves,corinader leaves and turmeic powder ,required salt & curd and mix well, saute for few minutes.
Add water to the frying pan and bring the mixture to boil.
Add the soaked and drianed basmati rice to the boiling gravy & stir well.
Cover pan with lid and cook the rice until soft & tender.
Serve hot with chicken or veg shorva and curd raitha.
