Tamarind Rice-చింతపండు పులిహోర
Ingredients:-
Rice-2cups
Tamarind pulp-5tbsp
Green chillies-5-10(split length wise)
Dry red chillies-5
Peanuts-2tbsp
Chana dal/bengal gram-1tbsp
Urad dal-1tbsp
Mustard seeds-1tsp
Fenugreek/methi seeds-1/4 tsp
Curry leaves-3springs
Salt to taste
Hing/Asafoetida-1/4 tsp
Turmeric-1tsp
Oil-3tbsp
Water-4cups.
Preparations:
Wash the rice and add 2cups water and cook the rice with adding 1tsp oil & required salt.
Remove the cooked rice from the cooker once its turned warm button. Immediately spread the cooked rice, using a fork, into a broad vessel.
Take tamarind into a microwave safe bowl and add water to it. Place this bowl in oven and cook on high power for 1 &½ minutes or till the mixture reaches a rolling boil.
Stir once and again cook the tamarind on medium power for 2 minutes. Cool the tamarind mixture and grind or squeez juice with hands to a smooth paste.
Remove stalks and break the dry red chilies into medium sized pieces.
Process:
Add tamarind pulp and turmeric &salt to the rice and mix well .
Heat a pan and add oil , when it is hot add peanuts and fry till they crack,remove from the heat and add to the prepared rice.
Add remaining oil to the pan and add fenugreek seeds,channa dal/bengal gram & urad dal and fry till they start changing color.
Now add the mustard seeds and fry till they splutter,next add hing & green chillies, curry leaves and dry red chillies , fry this seasoning well and remove from heat.
Add turmeric powder and mix well.
Now add this seasoning to the prepared rice and mix it well.
Serve after two hours, when it is cooled.
