Mixed Fried Rice – అన్నం వేపుడు – మిశ్రమము


Ingredients:
Basmati rice-2cups(cooked)
Chopped cabbage-1/4 cup
Chopped carrot-1/4cup
Chopped beans-1/4cup
Chopped capsicum-1/4cup
Green peas&corn seeds-1/4cup(Frozen)
Chopped spring onions-1/4cup
Grated ginger-1tsp
Grated garlic-1tsp
Green chillies-5(slit length wise)
Soya sauce-2tsp
Ajinamoto-1/2tsp
Salt to taste
Pepper powder-1/2tsp
Eggs-3(Scrambled)
Oil-1tbsp
Butter-2tbsp
Process:
Cook the rice with adding 4cups of water & 1tsp oil&salt  and spread it into a wide bowl and allow  it to cool.
Chop all the vegitables into small thin slices and keep aside.
Grate the ginger & garlic into small pieces and chop the spring onions and slit the green chillies into half .
Scramble the eggs in a seperate pan with adding a pinch of pepper & salt and keep it aside.
Heat a pan add oil & butter when its hot add grated ginger & garlic fry for a minute and add green chillies and fry for one more minute.
Add chopped vegitables one by one to the frying pan  and add frozen peas & corns, mix well and fry  it
keep frying till the vegetables are half cooked & the veggies will become crunchy.
Now add salt,soya sauce,ajinamoto,pepper powder mix well and fry for 2mins on high heat.
Keep stirring for 10 seconds and then lower the heat.
Add cooked rice & scrambled eggs into the frying veggies, mix nicely and fry for 3mins.
Finally add chopped spring onions and mix well fry for a minute.
Switch off the flame and serve hot.
