Mango Pickle- ఆవకాయ పచ్చడి
Ingredients:
- Raw Mangoes-2big size
- Red Chilly Powder-1&1/2cups
- Salt-1&1/4cups
- Fenugreek powder/Methi powder-1tbsp
- Mustard seeds powder-3/4cup
- Oil-4cups(1&1/2 cup 1st time and 2&1/2 cups after one week)
- Garlic cloves-15
Process:
- Remove the stems attached to the mangoes and clean thoroughly with clean water untill removes the sticky liquid then wipe each mango with dry cloth thoroughly.
- Use sharp cutting knife for cutting mangoes. Mangos cut along with the inner shell and kernel.
- Discard the mango seed part and remove it, then cut mangoes into small cube length pieces, discarding the seeds.
- Clean chopped mango pieces with dry cloth and dry the pieces for about 2 to 3 hrs to dry any moisture/wet.
- Then take 1 cup of oil and pre heat oil for about ten minutes and cool it and set aside.
- Then take clean and dry wide mouth bowl and keep mango pieces, add salt and mix thoroughly. After 3-4 minutes add turmeric, red chilli powder, mustard powder, garli cloves and mix well about 5 minutes.
- Now add only 1 1/2 cup of oil(we already pre heated and set cold) and mix it well to soak mango pieces and ingrediants. At last, add Methi powder and mix it thoroughly.
- Now take a jar and keep mango pieces with ingrediants into the jar and close the lid tightly and keep in dry place for one week. After one week add another 2 1/2 cups of oil (NO need to pre-heat) and mix it well and close the lid. Mix every day for about 10 days and make sure you close the lid properly. Your mang pickle is ready to from 11th day. This mango pickle stays for 1 year if you keep out of moisture/wet.
Note :
- Must select very sour mangoes
- Add fine red chilli powder ,it must be in red color
- Must keep in dry place and use dry scoop or ladle.
