Brinjal Chutny-వంకాయ పచ్చడి

Ingredients:
Eggplant-1
Tomato-1
Green chillies-5-10( adjust the spices as you like)
Coriander seeds-1tsp
Cumin seeds-1 & 1/2 tsp
Garlic cloves-5
Coriander leaves-1/4 cup
Tamarind –  small lemon size(Soak in water for 5 mins)
Salt to taste
Oil-2tsp
Process:
Wash and clean the eggplant ,cut it into small cubes.Wash the green chillies and tomato.
Cut the tomato into 4 parts.
Heat a pan add oil,when it is hot add cumin seeds & coriander seeds,green chillies,brinjal pieces fry for 10 mins on medium flame.
Add tomato cubes and fry for  2-3 minutes.
 Add garlic cloves,soaked tamarind & coriander leaves and cook it for 2 more mins, remove from the heat and allow it to cool.
Transfer these contents into the mixy jar,add required salt and grind it into a rough paste.
Serve with hot rice and ghee.
